Sicilian Eggplant with Tomato & Basil

Serves 4 or so.
One Beautiful Eggplant
Couple Tomatoes
Basil
Olive Oil
Flour
Mozzarella or Scamorza
Parmesan & Bread Crumbs
Salt, Pepper, Garlic fresh or powder. 


1. Peel of strips of the eggplant skin so it has stripes, then slice into 1/2 inch rounds.
2. Salt the eggplant lightly on both sides and let it sweat for about 10 minutes. Then dry with a clean rag or paper towel.
3. Dredge in a mixture of flour, salt, pepper and garlic powder or fresh garlic.
4. Heat a large flat cooking surface and add olive oil and cook on both sides.
5. Put on a baking sheet and layer basil leaf, Cheese slice, tomato, Parmesan and Bread Crumbs with olive oil.
6. Bake at 375 until the cheese melts and the breadcrumbs start to brown.
7. Serve with some Bread Bike bread or a little Etto pasta with fresh tomato and garlic.
