Banana Oat Muffins
Ingredients
- 2 brown bananas
- 2 eggs
- 7 oz Greek yogurt
- 1 tsp vanilla
- 2 cups oat flour
- 1 tsp baking soda
- 1 tsp baking powder
- 1-2 tsp cinnamon
- Olive oil spray
Instructions
- Preheat oven to 350 F
- Mash bananas
- Add eggs and mix
- Add Greek yogurt and mix
- Add vanilla and mix
- Add blueberries and mix
- Put oat flour, baking powder, baking soda and cinnamon in a bowl and mix
- Add dry ingredients to wet and mix
- Spray muffin tin
- Scoop batter into muffin tin
- Bake for 20 minutes at 350
- Let cool and remove from pan. Freeze any extras
