Banana Oat Muffins

Ingredients

  • 2 brown bananas
  • 2 eggs
  • 7 oz Greek yogurt
  • 1 tsp vanilla
  • 2 cups oat flour
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1-2 tsp cinnamon
  • Olive oil spray

Instructions

  1. Preheat oven to 350 F
  2. Mash bananas
  3. Add eggs and mix
  4. Add Greek yogurt and mix
  5. Add vanilla and mix
  6. Add blueberries and mix
  7. Put oat flour, baking powder, baking soda and cinnamon in a bowl and mix
  8. Add dry ingredients to wet and mix
  9. Spray muffin tin
  10. Scoop batter into muffin tin
  11. Bake for 20 minutes at 350
  12. Let cool and remove from pan. Freeze any extras
