Cheddar and Chile Egg Casserole

2 tbsp. butter, melted

5 eggs, beaten

1 cup cottage cheese

1/2 cup shredded cheddar cheese

4 oz can diced green chilies

1/4 cup flour

1/2 tsp. baking soda

salt

*You can add some cooked bacon or sausage

Preheat oven to 350

In a medium bowl, whisk together the eggs, cottage cheese, cheddar cheese, chilies, flour, baking powder, salt and butter.

Pour into an 8-inch square pan and bake until set, about 35 minutes.
