Potato Side Dish

Ingredients

  • Potatoes, 3 medium
  • Onion, ½ medium
  • Garlic, 2 cloves
  • Soy sauce, 2 Tbsp
  • Corn syrup or Sugar, 1 Tbsp
  • Sesame oil, 1 Tbsp.
  • Sesame seeds, pinch (optional)
  • Water, ½ cup

Directions

  1. Peel the potatoes. Wash and cut them into ¾ inch cubes until you have 2½ cups’ worth.
  2. Soak the potato in a bowl of cold water for 10 minutes to remove the starch and then place into a colander and rinse once more under running water.
  3. Cut ½ cup’s worth of onion into bite sized chunks. Set aside.
  4. Add 1 Tbsp. canola oil to a heated pan. Put the potato into the pan.
  5. Add 2 cloves of minced garlic and sauté it until the potato looks a little translucent.
  6. Add the onion and keep stirring for a few minutes.
  7. Add a half cup of water to the pan, 2 Tbsp. of soy sauce, and 1 Tbsp. of corn syrup (or sugar). Mix and simmer over medium heat for about 10 minutes until the liquid is evaporated.
  8. Keep stirring so it doesn’t burn. Add more water if it looks like it needs some.
  9. When the potato is cooked (fork tender, but not falling apart), turn off the stove and add 1 Tbsp. of sesame oil. Sprinkle a pinch of sesame seeds.

Spinach side dish

  • Spinach, 8 ounces, cleaned and washed
  • 1 garlic clove, minced
  • 1 green onion, chopped
  • Soy sauce, 1½ teaspoon
  • Sesame oil, 1½ teaspoon
  • Sesame seeds, 2 teaspoon
  • Korean red pepper powder, optional

Directions

  1. Boil 8 to 10 cups of water in a large pot.
  2. Blanch the spinach for 30 seconds to 1 minute with lid off, stirring with a wooden spoon.
  3. Strain the spinach and rinse in cold water a couple of times to remove any residual dirt.
  4. Squeeze out excess water and shape into a ball. Cut into quarters, so the spinach is bite-sized pieces.
  5. Mix the garlic, green onion, soy sauce, sesame oil, and sesame seeds in a mixing bowl. Add the spinach and toss well.
  6. Transfer to a bowl or plate and sprinkle with red pepper powder to add some heat, if desired.

Cucumber side dish

Ingredients

  • 3 Japanese or 4 Persian cucumbers (try Trader Joe’s)
  • Salt, 1/4 tsp
  • Rice vinegar, 3 Tbsp.
  • Sugar, 1 Tbsp.
  • Soy sauce, 1/4 tsp
  • Sesame seeds, 1 tsp

Instructions

  1. Slice cucumbers as thin as you can. Stir in salt, and let it sit for 5 minutes. Squeeze water out from cucumbers.
  2. In a small bowl, mix rice vinegar, sugar, and soy sauce together until sugar dissolves.
  3. Add vinegar mixture and sesame seeds to prepared cucumbers and mix well.
