Mango Salsa (from Jan Paulson)

This is the recipe I start with:

  • 2 mangoes, peeled, pitted, and cut into 1/4-inch pieces (about 2 cups)
    • (Pineapple chopped - optional)
  • 1 small white onion, chopped (soak in ice water for 20 mins to take the 'bite' out.
  • 1/2 cup packed, fresh cilantro leaves, chopped or less
  • 1 jalapeno chile, minced (ribs and seeds removed for less heat, if desired)
  • 1 tablespoon fresh lime juice or more
  • Coarse salt

*Mix ahead and let sit for 25-30 minutes.
