Yang Chow Fried Rice
Ingredients
- 1 medium onion, diced
- ½ pound ham, raw shrimp, raw chicken (marinate with soy sauce, corn starch, wine, sugar)
- This can be ½ pound of each meat or just pick one or two. It all depends on how much meat you like. I’ll also bring some Chinese sausage to mix in.
- 1 cup peas, fresh or frozen (if using frozen peas, thaw first)
- 3 large eggs
- 4-5 cups cooked white or brown rice that has been cooled down
- 2 Tablespoon of fish sauce
- 1 Tablespoon of soy sauce
Directions
- Lightly beat the eggs and set aside.
- Dice the meat(s). Rinse the shrimp under warm running water to thaw. Shell, devein, and cut in cubes. Toss the shrimp with seasonings (salt, pepper and 1/2 teaspoons cornstarch).
- Heat the wok and add 1 tablespoon oil. When the oil is hot, add the onion and cook till translucent. Push the onion up to the side, add the shrimp and stir-fry until they turn pink. Toss the frozen peas in and cook for one minute. Remove.
- Heat the wok and add 1 tablespoon oil. Stir fry marinated chicken until cooked through and remove.
- Heat the wok and add 1 tablespoon oil. Stir fry Chinese sausage for one minute, then toss in ham. Stir fry for one more minute. Remove from pan.
- Add 1 tablespoons of oil, pour in whisked eggs. When the egg mixture is almost cooked through, add in cooled rice. Stir well for about 10 minutes on high heat. Sprinkle salt and white pepper.
- Drizzle the fish sauce and soy sauce all around the rice and toss. When all rice is evenly heated up and mixed well with the eggs, add in cooked ingredients. Taste it and add more seasoning as needed.
Note: Fried rice was created to use up all the leftovers in your fridge, so for this dish, you can add as much meat as you want. In addition, you can add bean sprouts, pea pods, scallion, or carrots.
