TORTELLINI SOUP (Beverly Shaw)
1 lb. tube spicy sausage
1 pkg tortellini. (I like cheese filled but others are good too)
1 cup yellow onion chopped
2 cans fire roasted diced tomatoes
1 pkg cream cheese (I use light or fat free)
1 bag spinach
1 quart carton plus one can chicken broth.
Salt, pepper, chili pepper flakes
In large pot sauté sausage and onion
When done turn down heat and add tomatoes and broth.
Cube cream cheese and stir in. Sprinkle in hot pepper flakes if desired. Add salt and pepper to taste
Add tortellini
Simmer for an hour on very low heat.
About 15 minutes before serving dump in spinach and stir until wilted in. Simmer a few more minutes, then serve.
Really good with Caesar croutons on top.
